Ghana has a pretty extensive repertoire of fermented food in west Africa many of which we share with our West African brothers and sisters. This is a very non comprehensive list of fermented foods you can find in the country Fermented corn can give you kenkey (ga and fanti), etew, banku/amokple. Fermented cassava is used to also make banku/amokple, mixed with plain corn flour to make wodermekple or used on its own to make things from plakale to tokuma to ga fufui to attieke (please my Ivorian brothers and sister, colonial borders divides us so we have Ghanaian who also traditionally eat attieke) and gari. I am sure there is more to be uncovered. Also want to point out the cross cultural influence of indigenous American tradition on Ghanaian processing. I am just sinking my feet into the culinary cultures of northern Ghana and recognizing that sour is a desired flavour; fermented millets can be found in things like drinks (Pito or millet water), swallows like TZ, masa, porridge and many more. Beyond grains, we ferment seeds (dawa dawa, soya, Silk cotton etc) and the saps of trees. Cassava, corn and cacao are indigenous to the Americas where they have been perfecting the processing craft for millennia. Transatlantic trade allowed for cross cultural exchange that has seen cassava, corn and cacao become a part of the Ghanaian eco system.
