You can actually have almond extract if you’re allergic to almonds! Oddly, it’s made from the pits of peaches.

I made sugar cookies with Almond extract ONE time just because I didn’t have vanilla and I have not made sugar cookies with vanilla in maybe 10 years. The almond takes it to a whole other level.
