Ingredients: • 1 1/2 pounds chicken breast, chopped into bite-size pieces • 2 tsp salt (adjust to taste) • 1 1/2 tsp dried oregano, divided • 1 1/2 tsp dried thyme, divided • 1/2 tsp black pepper, divided • 2 tbsp oil from sun-dried tomatoes • 1 tbsp unsalted butter • 3 cups chicken broth • 2 1/2 cups heavy whipping cream • 12 oz campanelle pasta • 1 cup freshly grated Parmesan cheese (plus more for garnish) • 2 cups spinach, packed • 1/2 medium onion, diced • 4 garlic cloves, minced • 1/2 cup sun-dried tomatoes in oil, drained and julienned • 1/4-1/2 tsp red pepper flakes (optional) • For Garnish: • Freshly chopped parsley (optional) Instructions: 1. Cook the Chicken: * In a deep skillet over medium-high heat, heat 1 tbsp of sun-dried tomato oil and 1 tbsp of butter. Season the chicken with 1/2 tsp of oregano, 1/2 tsp of thyme, 1 tsp of salt, and 1/2 tsp of black pepper. Sauté for 7-8 minutes until golden and cooked through. Remove and set aside. 2. Sauté Aromatics: * To the same skillet, add another 1 tbsp of sun-dried tomato oil. Sauté the diced onion, minced garlic, and julienned sun-dried tomatoes for 5 minutes. Stir in the remaining 1 tsp of oregano, 1 tsp of thyme, red pepper flakes (if using), and the remaining 1 tsp of salt and 1/4 tsp of black pepper. 3. Make the Sauce: * Pour in the chicken broth and heavy whipping cream. Add the campanelle pasta and stir well. Bring to a simmer, cover, and reduce heat to medium-low.
