WELCOME TO CRUISING THE CARIBBEAN 🏝️ my brand new series showing you how to make some of the best dishes from the caribbean. this is part 5 and today we’re taking a trip to St Kitts & Nevis , to make the national dish of St Kitts & Nevis, Stew saltfish, coconut dumplings, seasoned breadfruit and spicy plantains (4) Breadfruit: 1/2 white onion chopped 1/2 red, yellow & green pepper chopped 2 garlic cloves minced Roughly 1/2 a breadfruit chopped  1 tsp salt & your favourite all purpose seasoning  Coconut dumplings: 2 cups flour  1/4 cup coconut shavings 1/2 cup coconut milk 1/2 tsp sugar 1/2 tsp salt Stewed satlfishh: 1/2 white onion chopped 1/2 red, yellow & green pepper chopped 1 large tomato chopped 250g saltfish (boiled twice for 15 minutes to remove excess salt) 2 garlic cloves minced 1/2 cup coconut milk 1 tbsp fresh/dried thyme 25g chopped coriander 1 stem of green onion chopped Spicy plantains: 2 ripe plantains 1 tsp ginger minced 2 tbsp hot sauce (1) Heat up some oil in a large pot over a medium heat, then add the onions + peppers + salt, season with salt and cook for 5 mins until soft. Add the garlic and cook for 1 minute, then add the breadfruit + thyme, add a dash of water, then cover and cook for 5 minutes. Remove from the heat and set aside. (2) For the dumplings, add all the ingredients into a bowl then knead for 2 minutes, cover for 10. Shaped into thin circles and add to a pot of boiling water, then cover and simmer for 10 minutes until cooked. Remove & reserve. (3) For the stew saltfish, heat up some oil in a large pot over a medium heat, then add the onions + peppers + tomato + a dash of salt and cook until soft (5 minutes). Then add the boiled sailfish & water, cook for 2 minutes, then add the coconut milk & thyme, reduce the heat and simmer for 10 minutes. (4) In the meantime, fry your plantains in hot oil until golden. Then add the ginger + hot sauce, mix well, then coat generously in the plantain.
