Homemade Donuts with Custard Cream  📕Recipe here:  ❂ Ingredients:  Donuts dough: 3 cup Bread flour 1 1/2 cup Cake flour 3 Tbsp Granulated sugar Pinch of salt 1 Tbsp Instant dry yeast 2 Large eggs  70g. Lukewarm water 1 Tsp Vanilla (dry) 200g. Milk 80g. Unsalted Butter Custard cream: 3 Egg yolks 50g Cane sugar 20g Cake flour 250g Milk 1/2 Vanilla beans ❂ Cooking process:   ⁃ Stir together warm water, 1 Tbsp sugar, and yeast and let rise for about 5 minutes.  ⁃ In a processor bowl mix together flour, sugar, salt, eggs, milk and vanilla  including the proofed yeast.   ⁃ Mix them until combined for about 3-4 minutes. Then, cover it with a clean kitchen cloth or plastic wrap and let it rest at room temperature for 10-12 minutes.  ⁃ After that, knead the dough by stand mixer or hand.  ⁃ Add room temperature butter to the dough and continue to knead for 12-15 minutes.  ⁃ Then put it in a covered bowl and keep it in a warm place until doubled in size around 1-2 hours.  ⁃ Roll out the donut dough and use a 3-inch cookie cutter to cut out donuts.  ⁃ Let rise again for about an hour, until doubled in volume.  ⁃ Heat the oil to 350F. Fry both sides until golden brown.  ⁃ Remove donuts from oil. Dip it into the sugar then using a pastry bag fill the custard cream.  ⁃ Custard Cream: In a bowl, whisk the egg yolks and sugar until light and fluffy. Add the cake flour and whisk vigorously until no lumps remain.  ⁃ Cut the vanilla bean lengthwise use a knife the scrape the seeds out. Add the milk and vanilla bean to a medium saucepan, heat then place over medium heat and bring to a boil.  ⁃ Immediately turn off the heat and set aside to infuse for 15 minutes.  ⁃ Whisk the hot milk and mixture until incorporated.   ⁃ Pour the mixture through a strainer back into the saucepan. Cook over medium-high heat, whisking constantly, until thickened and slowly boiling.  ⁃ Remove from the heat.
