Oh! Magic word was humidity! I was wondering how it was different to cook flour for a roux at low temp on the stove vs on a baking sheet in the oven at higher temp. That answers a lot! Thanks!! ❤️

What about old fashioned or instant rolled oats? Safe to eat uncooked as in no bake cookies or overnight oats (refrigerated in that case, of course)?
