@kalejunkie: SMASHED CUCUMBER SALAD WITH WHIPPED LEMONY FETA because no matter what season it is, cucumbers will always be my fav. This salad is light and refreshing and the flavors are on point-the cucumbers are tossed in honey, olive oil and a blend of spices, and then served over a tangy whipped feta which really just takes this to the next level. The recipe makes 2 meal salads or 4-6 smaller sides; you must make this! 8 Persian cucumbers 2 tb olive oil 2 tb honey 1 tsp Aleppo pepper 1 tsp cumin 1/2 tsp paprika 1/2 tsp cinnamon Whipped Feta 1 80z block feta 1/2 cup greek yogurt 2 garlic cloves 1/4 cup lemon juice (1 juicy lemon) Garnish: chopped parsley Smash or thinly slice cucumbers. Add to a large bowl, add a pinch of salt and toss well. Let sit to allow the much of the liquid to release while you make the lemony whipped feta. Add feta, yogurt, garlic and lemon to a food processor or blender. Blend until smooth. This should be thick and it will take 1-2 minutes to get completely smooth. Set aside. Next, drain as much of the liquid from the bowl of cucumbers. Add the olive oil, honey, Aleppo pepper, cumin, paprika, and cinnamon. Toss to coat well.
