BRAISED MUSHROOM NOODLES RECIPE 🍜 (Serves 2 normal folks or 1 hungry fellow) INGREDIENTS: - 200g dried wheat noodles of choice - 5 garlic cloves - 2 dried chili peppers - 10 to 12 shiitake mushrooms, the amount is up to you really - Enough cooking oil for sautéing  - 1 tablespoon of sweet soy sauce - 2 to 3 tablespoons of oyster sauce, depending on your preference - 1 chicken bouillon cube (equivalent to 10g) - Enough water to cook the noodles directly in the sauce and for the gravy (for my case, it was 800ml but it could be more or less for you, depending on the noodles you choose. The finished product should be a nice saucy bowl of noodles) OPTIONAL INGREDIENTS: - One egg - Some greens. I chose blanched Bok Choy - Toasted sesame seeds - A drizzle of sesame oil (highly recommended!!!) METHOD: 1. Wash your mushrooms, garlic cloves, and most importantly, those dried chili peppers first and foremost. Pat them dry so your pan/wok won’t be explosive when you’re cooking. 2. Cut the mushrooms however you like. I just cut it in halves so it feels more meaty to eat. And of course, cut the stalks because those can be very hard to chew. Mince the garlic and cut the dried peppers into one inch pieces. 3. Add enough cooking oil to your pan/wok and sauté the garlic and peppers in medium heat till fragrant. Make sure the heat isn’t high to avoid burning the garlic before it releases its flavors. Preferably, toss it in before the oil gets too hot. 4. Toss in the mushrooms and sauté till tender. 5. Add in your sweet soy sauce, sauté, oyster sauce, sauté. 6. Add in water, according to the type of noodles you choose. You can start with 500ml and add more as needed later. Then add in the bouillon cube. 7. Add an egg (if you choose to put an egg in it) into the lightly boiling water. The key to a beautifully poached egg is to add it in while the water’s simmering. Not when it’s vigorously boiling. 8. Once the egg is poached, crank the stove to high and toss in your noodles directly into the liquid. We’re cooking the noodles directly in it, so add water according to the type of noodles you choose. I added 800ml in total for the noodles to be fully cooked (took about 5 minutes) and still have a good amount of gravy left. Best thing about this method is that you get a nice thick velvety gravy without having to slurry. 9.
