Add your favorite toppings for the ultimate warming meal 🥑🌶 Autumn Veggie Slow Cooker Chilli Recipe Ingredients: • 1 bag of frozen or chilled vegetarian mince (you can use meat if preferred) • 1 can of chilli beans (in chilli sauce) • 1 can of tinned cherry tomatoes • 1 vegetable stock cube • 1 red wine stock cube • 1 tsp mild chilli powder (or hot if you like it spicier) • A splash of Henderson’s Relish • 2-3 stalks celery, chopped • 2 carrots, chopped • 1/2 butternut squash, cubed • Salt & pepper to taste • Optional toppings: fluffy steamed white rice, nachos with melted cheese, salsa, fresh guacamole, sour cream Instructions: 1. Add the vegetarian mince (or meat) to your slow cooker. 2. Pour in the can of chilli beans and tinned cherry tomatoes. 3. Add the chopped celery, carrots, and butternut squash. 4. Crumble in the vegetable stock cube and red wine stock cube. 5. Stir in the chilli powder and add a splash of Henderson’s Relish. 6. Season with salt and pepper. 7. Cover and cook on low for 6-8 hours. 8. Serve with steamed rice, nachos with melted cheese, and your favorite toppings like guacamole and sour cream.
