@foodwithbearhands: Scorpion Burger Onion Rings Makes 6-8 Large Onion Rings For the Carne Asada: 1 lb Flat Meat or Skirt 2 Oranges 2 Limes 1 7oz Coronarita 2 oz Soy Sauce 2 oz Worcestershire 1 Tbsp Garlic Powder 1 Tbsp Chili Powder 1 Tbsp Oregano 2 Tsp Salt 1/8 Cup Sliced Onion 1/8 Cup Chopped Cilantro *Marinate for 2 hours or Overnight For the Beer Batter: 2 Cups Flour 2 7oz Coronarita’s 3 Tbsp Paprika 3 Tbsp Baking Powder (double acting) 2 Tbsp Garlic Powder 1 Tbsp Salt 1 Tbsp Pepper *Mix until well combined For the Jalapeño Cilantro Crème: 1 Cup Mexican Crema (table cream) 1 Jalapeño 1 Bunch Cilantro 3 Garlic Cloves 1 Lime Squeeze 2 Tsp Salt *Blend until smooth and add 1 oz water or more to get the correct consistency For the Scorpion Onion Rings: 2 Large Yellow Onions Marinated Carne Asada 2 Jalapeños 1/2 Onion 9 oz Beef Chorizo Beer Batter 8 oz Oaxaca Cheese 40 fl oz Canola Oil 6 oz Jalapeño Cilantro Crema 3 Tbsp Cojita How to: 1. Marinate your Carne Asada and then run through a meat grinder 2. Cook Chorizo and set aside 3. Sauté Jalapeños and Onions until translucent and add your ground Carne Asada 4. When Carne Asada is medium rare add in your cooked Chorizo and mix well 5. Next cut Onions and make a gap to fill 6. Fill first with strips of Oaxaca Cheese 7. Then add in your Spicy Scorpion filling 8. In the freezer for 1 hour or overnight 9. Then set oil to 350 degrees and fry for 6-8 minutes or until golden brown 10.
