You can create this fresh, delicious cheese from scratch. 🧪 Here’s the quick version: 1️⃣ Dissolve 1 ¼ tsp citric acid in 1 cup water in a pot, add 1 gal milk (not ultra-pasteurized) & heat to 90°F. 2️⃣ Dissolve ¼ tablet of rennet in ¼ cup water, add to milk, mix gently, and let sit for 5-10 min. 3️⃣ Cut curds into cubes, heat to 110°F, and gently stir. 4️⃣ Strain curds, press out the whey, and heat curds in hot whey (or microwave) until stretchy. 5️⃣ Stretch, knead, salt, and shape your cheese.
