Velvety Paprika Chicken with Roasted Tomatoes, Sour Cream & Crispy Shallots-COOKING WITH BRIGHT EYES Recipe Ingredients: 2 lbs boneless, skinless chicken thighs, trimmed and cut into large pieces 1 tablespoon olive oil 1 large yellow onion, finely chopped 4 cloves garlic, minced 2 tablespoons sweet Hungarian paprika 1 teaspoon smoked paprika 1 teaspoon caraway seeds 1/2 teaspoon black pepper 1 teaspoon salt 1 tablespoon tomato paste 1 1/2 cups chicken broth 1 cup roasted cherry tomatoes 1 red bell pepper, sliced 1 yellow bell pepper, sliced 1/2 cup sour cream 1/4 cup heavy cream 2 tablespoons all-purpose flour 2 tablespoons fresh parsley, chopped 1/3 cup crispy fried shallots 12 oz wide egg noodles 2 tablespoons butter Extra fresh parsley, for garnish Directions: Heat the olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt and black pepper, then sear them in batches for 2-3 minutes per side until lightly browned. Transfer the chicken to the slow cooker. In the same skillet, add the chopped onion and bell peppers. Cook for 4-5 minutes until softened. Add the garlic and cook for another 30 seconds. Stir in the sweet paprika, smoked paprika, caraway seeds, and tomato paste. Cook for 1 minute, stirring constantly, until fragrant. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Transfer the mixture to the slow cooker. Add the roasted cherry tomatoes and nestle the chicken into the sauce. Cover and cook on LOW for 5-6 hours or HIGH for 2 1/2-3 hours, until the chicken is tender and cooked through. About 20 minutes before serving, whisk together the sour cream, heavy cream, and flour in a bowl until smooth. Stir a few spoonfuls of the hot cooking liquid into the mixture to temper it. Stir the sour cream mixture into the slow cooker. Cover and cook on LOW for another 15-20 minutes, stirring once, until the sauce is thick, creamy, and velvety. Do not allow the sauce to boil vigorously. Meanwhile, cook the egg noodles according to the package directions. Drain well and toss with butter. Spoon the creamy paprika chicken and vegetables over the buttery egg noodles. Garnish generously with fresh parsley and crispy fried shallots.
