Date stuffed cookies aka “Kleicha”... A Middle Eastern butter cookie from Iraq. ———————— Follow @cookingwithlamees for more easy and fun recipes. —————— Eid Adha mubarak to all of my Muslim followers, may these days and the days after be filled with blessings. ————————————— I remember my mom making these all the time growing up, the smell of fresh baked dough with an infused smell of butter with a hint of cardamom was pure heaven , the smell would literally fill the house for hours. ‏Kleicha is very traditional Iraqi sweet that is usually prepared on Eid celebrations, A soft buttery dough that comes in several traditional shapes & fillings ‏Ingredients: 3 cups flour/560gm 1 cup butter softened/250 gm 1 cup warm milk 1 tsp Salt 1 tbsp baking powder  1 tsp bicarbonate sodium  1 egg Walnut mixture: 150gm crushed walnut, 4 tbsp sugar, Coconut: 50gm shredded coconut, 3 tbsp sugar, Method: ‏Heat oven to 380 F Degree ‏Prepare the dough by mixing the flour,salt& baking powder & sodium together into a stand mixture bowl, then add in the butter & mix on medium until it forms into a bread crumb like texture, add the milk gradually until it starts to form a dough , cover the bowl with a foil&wrap it with a warm cloth&leave it aside for a couple of hours ‏Start preparing the dates:: ‏Place a pan on a stove,add the butter to it , once melted add the dates&Cardamon& start squashing them  until it becomes like a dough , remove&let it cool down for 10min. ‏For the dough: ‏ , cut it first in half&place the first half on a oiled surface, start spreading it using a rolling pin into a rectangular shape until it becomes thin ( less than ½ cm thickness), cut into 3 pieces, spread the date mixture gently using your  fingers to spread evenly, cover the dough with the date mixture completely leaving only ½ cm on the edge then fold it like a swiss roll& gently press on it using the rolling pin to give it more of a rolled shape ,  ‏using a knife start cutting pieces&placing them on a greased oven tray , place in tray,Whisk one egg&brush the pieces , place in middle of the oven for 22-26 min or until golden. #kleicha #iraqifood #middleeasternfood #middleeasterndessert #cookingwithlamees #foodietiktokvideo #middleeastern
