Place the crushed saffron in a small bowl. Add ice cubes. Let it sit at room temperature for 20 minutes or until ice melts. Chicken Koobideh: In a large bowl, combine minced chicken, onion, garlic, salt, sumac, garlic powder, ghee, and saffron water. Mix well. Preheat oven to 430°F (220°C). Grease a baking sheet with ghee/butter. Add the chicken mixture and spread evenly. Divide into long kebab shapes. Drizzle with additional butter (2-3 tbsp). Bake on the bottom rack for 10-12 minutes. Broil on the top rack for 2 minutes on high, flip, and broil for an additional 2 minutes or until lightly golden. Saffron Rice: Rinse rice with water until clear. Soak for 1 hour. In a skillet, add oil and aromatics. Sauté for 30 seconds. Add water and let it boil. Season with salt. Add rice and cook for 10-15 minutes or until 3/4 cooked. Strain remaining water and add butter, saffron water on top. Cook on low for 20 minutes.Turn off heat and let it rest, covered, for 5 minutes. Top it with barberries. Garlic Sauce: Mix all ingredients in a bowl. Taste and adjust as needed. Serve: Serve the Chicken Koobideh with Saffron Rice, Barberries, and Garlic Sauce.
