Ingredients: @Drink Poppi for the good vibes 1lb ground chicken 1 red bell pepper, diced Juice of 1/2 lemon Zest of 1 lemon Shake of @athenosfeta feta cheese Seasonings: onion powder, salt, pepper, turmeric Cauliflower florets Cherry tomatoes, halved Cucumber, diced Drizzle of @Primal Kitchen Foods Greek dressing @A Dozen Cousins yellow rice, prepared as directed @Baba’s hummus Instructions: 1. In a bowl, combine chicken, bell pepper, lemon juice and zest, feta, and seasonings (minus turmeric) and form into meatballs using a cookie scoop 2. Brown on both sides in cast iron (@Lodge Cast Iron ) and finish cooking in oven until internal temp reaches 165° 3. Season cauliflower with above seasonings and bake at 425° until crispy 4.
