@simone_anderson: Healthier Taco Bowl 🌮🥑 Ingredients: * Kūmara, cubed * Salt & Pepper * 500g beef mince * 1 packet of taco seasoning * Cos lettuce, shredded Salsa: * 2 tomatoes, chopped * 1/2 red onion, diced * Coriander * Fresh lime juice * Salt & pepper to taste Guacamole: * 1 avocado * 1/2 red onion, diced * Coriander * Fresh lime juice * Salt & pepper to taste Toppings: * Plain Greek yogurt Method: 1. Kūmara: Toss cubed kūmara with salt. Cook in the air fryer at 200°C for 15 minutes until tender. 2. Beef: In a medium pan, cook beef mince with taco seasoning until browned and well mixed. 3. Salsa & Guac: Chop and combine all ingredients for salsa and guacamole in separate bowls. 4. Assemble: Layer kūmara, seasoned beef, salsa, cos lettuce, and guacamole in a bowl.
