I’ll be trying some new stuff under the microscope in the next weeks/months 😄 what would you like to see? I must admit that I’m a sucker for sugar (gosh that sounds weird??) and now I’m even more of a fan 🥹 look how prettyyyyy these crystals are 😩 Apart from being a major source of dental caries and various health issues, sugar is a huuuuge part of life on earth! It can be found almost everywhere and it’s a crucial component of all biological processes. Sugar comes in many many forms; table sugar like the crystals from the video is called sucrose, but there’s also glucose, fructose, lactose and maltose which all have different molecular shapes!  Not only plants synthesize their own sugars as energy source and provide us with delicious fruits, veggies and grains but sugar is also found in DNA (it’s the D as in deoxyribose). Sugar has been found in primitive meteorites along with other biological compounds like amino acids (which form proteins) and nucleobases. Chances are that sugar can be found in deep space! Ok let’s come back down on earth for a sec 😂 The sugar crystals you can see in this video doesn’t come from meteorite but rather from sugarcane! Sugarcane is a very tall grass with big stems that transforms sunlight energy into chemical energy by a process called photosynthesis (like other plants). It’s mainly grown in tropical countries like Brazil, Thailand, Australia but also in China and India and has to be process in order to take the crystal form. This transformation is pretty complex but they basically need to extract the juice and heat it until it becomes a syrup and then crystals, which is the most concentrated form of sugar since all the water evaporated!
