Inspired by the recipe from @slimpickinskitchen * 4 tablespoon butter * ½ onion (1 cup) minced * 2 stalks celery (1 cup) minced * 1 carrot (1 cup) minced * 2 cloves garlic (2 tsp) minced * ¼ teaspoon salt * ½ cup flour * 2 (12 oz.) favorite beet * 3 cups chicken stock * 1 cup heavy cream * 16 ounces sharp cheddar shredded * 8 ounces gruyere cheese (or more sharp cheddar) * 1 teaspoon yellow mustard * 8 slices bacon (cooked and crumbled) * Toppings: extra cheese, bacon, green onion * Dippers: Hot pretzels Directions: 1. Add butter, carrots, celery, onion, garlic, and salt to a soup pot. Cook until veggies are softened. 5 min on medium heat. 2. Sprinkle in flour and whisk for a couple minutes. 3. Slowly pour in beer, chicken stock, cream, whisking the whole time. Bring to bubbling and then lower to a simmer for 15 minutes. 4. Add all the cheeses, a handful at a time, whisking to make sure all completely melted in. 5. Add mustard, pepper, and cooked bacon. 6. Top with more cheese, bacon, and green onion. 7.
