The easiest & most delicious high protein meal prep 🍝 This chicken parmesan inspired meal prep is not only super easy but it is packed with protein and some sneaky veggies. Here is what you’ll need for one serving: 1/2 cup cooked pasta (I like to choose a higher fibre option) 3 oz. cooked chicken breast 1/2 cup marinara sauce 1/4 cup cottage cheese, blended 1/2 tbsp. Parmesan cheese 1/2 oz. mozzarella cheese, shredded 1/2 small zucchini, diced In an oven safe dish combine the pasta, chicken, zucchini, marinara and cottage cheese. The cottage cheese helps to create a high protein rose sauce (and no you will not taste it). Sprinkle the Parmesan and mozzarella on top. I garnished with parsley because it looks nice but this is just an extra step. Bake at 375 for 20 minutes until the sauce is bubbling and the cheese is melted.
