full recipe below 🫶 ROASTED GARLIC BUTTERNUT SQUASH PASTA 1 small butternut squash (about 1 1/2 lb. cubed squash total) 2 shallots, halved and peeled 15 garlic cloves Handful of fresh sage leaves 3 Tbsp. olive oil 2 tsp. seasoned salt or Cajun seasoning 1 1/2 cups chicken stock 3/4 lb. hot Italian turkey or pork sausage 1 lb. short pasta (I used radiatore) 1/3 cup half and half or heavy cream 1/4 cup grated Parmesan cheese Preheat oven to 375F. On a sheet pan, add butternut squash and shallots in an even layer. Place garlic and sage on a sheet of foil and drizzle with one tablespoon of the olive oil; wrap to encase completely and place on baking sheet. Drizzle squash and shallots with remaining olive oil and toss with seasoned salt. Roast until fork tender, about 30 minutes. In a blender, add roasted squash, shallots and garlic and blend with chicken stock; set aside. Meanwhile, bring a large pot of water to a boil and add salt. In a separate very large skillet, add sausage and cook, crumbling, until nicely browned. Boil pasta and add to the skillet with sausage, squash puree and enough pasta water to loosen into a smooth sauce.
