Petai is one of those super divisive vegetables. Either you love it or hate it. I'm still trying different ways to cook this vegetable but in the end I always go back to Sambal Petai. This bitter stinky bean really benefits from getting it's flavour complemented by a good sambal. Make your own sambal or if you're really hard pressed, buy a good brand of sambal. Personally, I like a touch of sweetness to help balance out the petai. Is my take traditional? Probably not, but I enjoyed mine with a bowl of steamed rice. Recipe for FOUR to share Ingredients: 120g petai halved 100g homemade sambal 15g dried shrimps 2 tbsp sugar 5 kaffir lime leaves shredded Instructions: 1. Wash a pat dry the petai beans 2. Cut in half to check for worms 3. Rehydrate dried shrimps in hot water and reserve the water after 4. Lightly fry the shrimps with oil till fragrant 5. Add the sambal and cook it out if not already done so 6. Add the petai and cook until tender 7. Season with salt (if needed) or sugar 8. Pour in the shrimp water and cook until tender and the sambal is reduce and concentrated 9. Pork Loin w/Roasted Potatoes! Ingredients: Hatfield Brown Sugar Pork Tenderloin - 1 Yellow Potatoes - 1 1/2lb Asparagus - 2 bunches Olive Oil Salt Pepper Minced Garlic Parmesan Italian Seasoning Directions: 1. Start by cutting any of three larger potatoes in half. Add to a pot and cover with salt. Add a pinch of salt and boil until tender. 2. Trim and wash asparagus. Add to a sheet pan and drizzle on olive oil, followed by a few tablespoons of minced garlic. Finish with some salt, pepper and as much parm that feels right. Add to the oven at 425 and cook for 15-20mins depending on the thickness of the asparagus. 3. I love to use pre-marinate pork loins for easy dinners. This one was a brown sugar flavor that I just trimmed some of the excess fat off. Sear all sides on high for 3-5mins. Once seared add to the same oven and cook until internal temp reaches 150. Remove and let rest for a few mins. The internal temp will connote to climb to 160-165 and it’ll be ready. 4. Once potatoes are tender strain and add to a bowl. Season with olive oil, minced garlic, salt, Italian seasoning and Parmesan until your arm hurts. Add to a pan and roast for 25-30mins until potatoes are slightly crispy.
