Bourbon Bacon Jam 1 lb Bacon – chopped ½ Onion – minced ½ Cup Brown Sugar ½ Cup H2O 1/3 Cup Coffee ¼ Cup Bourbon 2 tbsp Balsamic Vinegar 1. On a cutting board, slice the bacon into 1/3-inch pieces and transfer to a large frying pan or skillet. Fry until pieces separate and are still chewy. Do not cook until crisp! 2. Using a slotted spoon or fork, remove bacon from grease and transfer to a paper towel. Save 3 tablespoons of bacon grease. 3. Add the onions to the empty pan and cook on medium-low for about 8-10 minutes then reduce the heat to low. Add the brown sugar and stir. Continue to cook until the onions have caramelized to a dark golden brown (about 20-30 minutes). 4. When onions have caramelized, add the bacon, coffee, and water and increase the heat to medium. Continue to cook, stirring about every five minutes, until the onions are thick and gooey. Takes about 30-35 minutes. Remove from the heat and stir in the balsamic vinegar and bourbon. #burger #tailgate
