First time making one of my wife’s favorite Guatemalan dishes - pepián 🇬🇹🇻🇳 🛒 Ingredients: For the sauce blend: 2–3 ripe tomatoes 🍅 1/2 white onion 🧅 3 garlic cloves 🧄 2 dried pasilla or guajillo chiles (stems/seeds removed) 🌶️ 1/2 cup sesame seeds 1/2 cup pepitas (pumpkin seeds) 2–3 small tomatillos (husks removed) 🟢 A handful of fresh cilantro 🌿 2 corn tortillas (or a slice of bread, to thicken) Salt + black pepper to taste 🧂 For the stew: 2 lbs chicken (bone-in is best!) 🍗 3–4 potatoes 🥔 (peeled & cubed) 2 carrots 🥕 (peeled & chopped) 1/2 cup green beans (optional) Water or chicken broth (enough to cover) For serving: White rice or tortillas 🍚🌽 👨‍🍳 Instructions: Toast & Roast: Toast sesame seeds and pepitas until golden. Set aside. Roast tomatoes, tomatillos, onion, garlic, and chiles until soft and charred. Blend the Sauce: Blend all roasted ingredients with toasted seeds, tortillas, cilantro, salt, and black pepper. Add a splash of water or broth to help it blend smooth. (Strain if you want it silky!) Cook the Chicken: In a pot, sear chicken pieces with a little oil. Season lightly. Pour in the blended sauce and add just enough water or broth to cover. Simmer: Simmer for 30–40 mins, then add potatoes, carrots, and green beans. Cook another 15–20 mins until veggies are tender.
