These days, life has been so hectic. I stumbled across a recipe for Sheet Pan Chicken Kebabs on my explore page, and they looked so good and simple I knew I had to make my own version for my family. Sure enough, they were very easy and quick to prepare and turned out delicious!   Sheet Pan Chicken Kebabs   Ingredients: For the Kebabs: 1 onion 2 garlic cloves 1 medium red bell pepper 2-3 chili peppers (optional) 2 lbs boneless skinless chicken thighs, minced (or ground chicken) 2 tbsp olive oil ½ tsp garlic powder ½ tsp black pepper ½ tsp cumin 1 tsp paprika 1 tbsp salt 6-8 serrano peppers Chicken stock   For the Spread: 2 tbsp butter or olive oil 1 tbsp tomato paste ¼ cup warm water ½ tsp garlic powder   For the Sauce: ¼ cup ketchup ¼ cup mayo 1 tbsp sriracha 1 tbsp pickle relish 1 tbsp pickled jalapeño juice   For Serving: Flour tortillas (classic flour tortilla recipe is in my cookbook, or spicy chipotle ones are on my website) Bulgur pilaf (recipe on my website!) Sumac onion salad Fresh tomato slices   Instructions: Prepare the Kebabs: In a food processor or blender, add onion, garlic cloves, bell pepper, and chili peppers, if using. Blend until it resembles a thick paste. In a mesh strainer lined with cheesecloth, squeeze out most of the liquid. Add the mixture to a medium bowl along with minced chicken, olive oil, garlic powder, black pepper, cumin, paprika, and salt. Mix and combine well.   Preheat the oven to 425F.   Grease a 9x13 sheet pan and transfer the ground meat mixture to the pan. Using your hands, press the mixture into an even layer on the baking sheet. Make small holes to separate the mixture, as shown in the IG reel. With a knife or bench scraper, make 9-10 kebab portions. Top with serrano peppers.   Bake the kebabs on the center rack for 12-15 minutes. Pour a bit of chicken stock at the bottom of the pan, then bake for an additional 2-4 minutes until golden brown. Remove from the oven.   Prepare the Wrap Sauce: In a small bowl, add ketchup, mayo, sriracha, relish, and pickled jalapeño juice. Mix to combine and set aside.   Prepare the Tortillas: In a small bowl, add butter or oil, tomato paste, warm water, garlic powder, and salt. Stir to combine. Brush about 1 tbsp of spread onto each side of your tortillas and cook in a cast iron or griddle for 1-2 per side over medium heat. Transfer tortillas to a tortilla warmer and set aside until ready to assemble.   Serve the Kebabs: Place the warm tortillas on a plate and add some bulgur pilaf, onion salad, tomatoes, and sauce. Wrap and serve immediately with additional sauce on the side. You can also serve all the toppings on a plate, Turkish-style, as shown in the video!   Bon appetit!
