@mo_good_food: Happy girl dinner 🍝🍷✨ 1 can tomato paste 8-10 cloves garlic, grated 1 lb dry short pasta 4 cups water or broth 2 oz vodka 2 tbsp EVOO 4 tbsp unsalted butter 2 cups freshly shredded pecorino romano 1/4 cup cream (heavy cream or half and half, whatever you have.) 2 tbsp calabrian chili paste salt and pepper to taste In a large sauce pan over medium-low heat, add EVOO and garlic and saute until fragrant. Add tomato paste and saute until it darkens in color (very important) Add vodka, and deglaze Add pasta and water or broth and stir to evenly incorporate the tomato paste mixture into the liquid Bring to a simmer and stir regularly to ensure the pasta doesn't stick to the bottom. Depending on the size of your pan, you may need to add less liquid to begin with, then add more it as it absorbs.
