kneading also truly helps. the more gluten development there is the stronger the bonds. that's why when meaning sourdough you don't really want to use more flour until the final shaping

also a friendly tip. try keeping one hand clean om the side to hold the bowl or grab somethings and mix with the other one👌🏻. love your vid's keep it up🫶🏻
