Chianti Braised Veal Shanks 1/2 white onion large dice 3 stalks of celery chopped 2 large carrots peeled & chopped 1 Tbsp picked rosemary 1/2 bottle Chianti  2 large veal shanks, seasoned with S&P 1Tbsp neutral oil + 1tsp neutral oil (avocado) 3 cloves crushed garlic 1.5Tbsp tomato paste 2Tbsp AP flour 3 bay leaves 2 whole sprigs rosemary Neutral oil for frying Mashed potato for serving 2Qts warm veal/beef/chicken stock  -Season shanks heavily with salt and pepper -Prep Veg -Preheat oven to 350f -Sear shanks in neutral oil until heavily browned all over, remove from Dutch oven and place on a rack -Turn heat to medium, add vegetables. Stir frequently for 3-4 minutes until caramelizing. -Add tomato paste and cook while stirring for 3 minutes until the bottom is beginning to caramelize hard -Add flour and continue to cook while stirring 2 minutes -Add wine, stir and bring to a boil while scraping off the fond from the pan -Add shanks, bay leaf, rosemary sprigs, stock. Bring to a simmer. Season to taste. Cover and place in oven. -Cook for 90 minutes and check doneness with a fork. Add an additional 15 minutes at a time until desired doneness -Fry picked rosemary in avocado oil at 350 until the leaves stop bubbling. Season with salt.  -Serve shanks with strained jus, fried rosemary, and mashed potatoes. -Enjoy.
