this explanation seems like setting an arbitrary boundary on a set based on a real quality of numbers just to make a method work instead of just setting a new rule for the method to make it fit

I always thought of primes as building blocks. You can have as many “1” building blocks as you like, but it never changes the value of the tower.

Prime numbers are tax. 1 is not a prime number, because it is GOD and there is money there that is tax. -1 is not a prime number, because it is dead in the tax system.
