Prepare the Sprats • Wash the dried sprats thoroughly and pat them dry with a paper towel. • Choose your cooking method: • Baking: Bake the sprats at 200°C for 30 minutes with a light coat of vegetable oil. • Deep-frying: Fry until crispy. • Air-frying: Fry until lightly golden and crisp. 2. Sauté the Aromatics • Heat coconut oil in a pot over medium heat. • Add curry leaves, pandan leaves, and garlic. Fry until fragrant. 3.
