@chefarazada: Curing olives at home is easier than you think. I think homemade olives are the best. It takes a little time but most of it you’re not really doing anything. Also the satisfaction you get at the end and the money you’ll save is definitely worth it. . Olives (green or just turning black) -finishing brine 1/2 cup (75g) salt 4 cups water Lemon Rosemary or thyme . Take fresh olives and crack each one with a mallet. Be careful not to break or bruise the pit. You just want it cracked open a little. Place the olives in a bowl filled with water and let it sit near the sink. Drain and refill the water every morning and every evening for 6-10 days or until the olives are no longer bitter. Drain olives and put them in jars filled with brine, lemon and herbs. Seal jars and store in a cool dark place for at least a week or until the olives absorb that delicious saltiness. .
