Salmon Dip Ingredients: (1) 6-8 oz Salmon (Baked, Pan Seared, Grilled or Smoked) 1 Tsp Creole Seasoning 1 Red Fresno Pepper (diced) 3 Scallions (diced) 4 Garlic Cloves (minced) 1 Tsp Horseradish 5 oz. Baby Spinach 8 oz. Cream Cheese (room temp) ¼ cup Mayonnaise ¼ cup Sour Cream 3/4 cup Gruyere Cheese (shredded) Salt and Pepper to Taste Instructions: Preheat the oven to 400 degrees. Cook your salmon to your preference. Break apart the cooled salmon by hand and add to a large mixing bowl. Add the spinach to a large sauté pan, add a teaspoon of olive oil and the minced garlic. Begin cooking over medium-high heat. Use tongs or a wooden spoon to move the spinach garlic mixture around until it wilts and add to the bowl with the salmon. Add the room temp cream cheese, creole seasoning mayo, sour cream, horseradish, fresno pepper, scallions, gruyere cheese and salt and pepper and continue mixing until well-combined. Scoop the mixture out into an oven safe baking dish and bake until the top is brown and the dip is bubbling all over, about 20-25 minutes. Remove and let cool slightly before serving.
