for day 7 of my one pan meals series, I’m making this one-pot chicken sausage & rice! this is one of the easiest dinners you could make this week!! mix in lots of spinach for some added greens and this 30 min meal will make your night easier 🫶  scroll back on my feed to check out past days! 💕 - 2 tbsp olive oil - 12oz Italian-style chicken sausage, sliced - 1 1/2 cups dry jasmine rice - 1 tsp kosher salt - 1/2 tsp black pepper - 1 tbsp garlic powder - 1 tbsp dried oregano - 3 1/2 cups low-sodium chicken or vegetable broth - 1 tbsp coconut aminos or reduced-sodium soy sauce - juice of 1/2 lemon - 4oz baby spinach heat the olive oil over medium heat in a large deep skillet. add the sliced chicken sausage and cook for about 3-5 minutes on each side, until browned and crisp. remove the sausage and set aside. in the same skillet, add the dry rice and toast in the oil for 2-3 minutes. season with the salt, black pepper, garlic powder, and oregano and mix to combine. add the broth, stir to combine, and cover the skillet. cook, covered, for 12-16 minutes, until the rice is fully cooked. add the soy sauce, lemon juice, and spinach, stir, and cook to let the spinach fully wilt. remove from heat and add the chicken sausage. mix well and serve 🫶  can’t wait for you to try it! 💕  #onepotmeal #onepanmeal #onepanmeals #onepotmeals #easyhealthydinners #easydinners #glutenfreerecipes #dairyfreerecipes #healthydinners #30minutemeals #mealprep #mealprepideas #chickenandrice #onepotrecipe
