No-bake blueberry cheesecake! This no-bake cheesecake is ridiculously yum.. it has fresh blueberries running through the cheesecake batter, a sweet crumbly biscuit base and a blueberry compote. Honestly SO good! Full recipe below. Ingredients 500g/ 2 cups cream cheese 270ml / 1 cup double cream 100g / 1/2 cup icing sugar 300g / 3 cups biscuits 100g / 1/3 cup unsalted butter 150g / 3/4 cup blueberries Blueberry compote: 100g / 1/2 cup blueberries 30ml water Juice 1/2 lemon 3 tbsp sugar Instructions 1. Crush the biscuits into a fine crumb. Then add the melted butter and mix. Press the crumb into a deep 8-inch baking tin with a removable bottom. 2. In a standing mixer, whip the double cream until firm peaks. Then add the cream cheese and icing sugar. Whisk together until all combined. Add your blueberries and fold through. 3. Add the filling to the the baking tin and even it out with a spatula. Leave to chill for a minimum of 5 hours in the fridge. I like to leave mine overnight. 4. When ready to serve, make your compote by adding your blueberries, lemon juice, water and sugar to a frying pan and place on a medium-high heat. Squish the blueberries down and stir for around 10 minutes, until your desired consistency forms. It will also solidify more when you remove from heat. 5.
