paella was originally a dish for the poor. so in every region you go the paella will be different. close to the sea it's gonna be seafood, into the land it's gonna be chicken pork etc

For people arguing about the dish, paella is the name of the frying pan so you can call paella meanwhile you use rice and the pan, “paella valenciana” is a specific list of ingredients.
