HIDDEN VEGGIE SERIES 🥦 Day 2/7 - Lasagna Meat sauce: * 2 tablespoons olive oil * 1/2 brown onion, diced * 1 small carrot, diced * 1 red capsicum, diced * 1/2 zucchini, diced * 1 stick of celery, diced * 500g beef mince * 1 tsp salt * 1 tsp pepper * 1 x 400g can crushed tomatoes * 1 1/2 cups passata * 500g Lasagna sheets * Mozzarella cheese, grated Ricotta & Spinach Filling: * 2 tbsp olive oil * 1 full bag of spinach * 2 cups ricotta cheese * 1/2 cup grated parmesan cheese * Salt and Pepper Instructions: * In a pan, heat olive oil over medium heat. Add the spinach and cook until wilted. Remove from heat and let cool slightly. In a bowl, combine ricotta, grated parmesan and spinach. Mix until combined. * In a pot, heat oil over medium heat. Add onion, carrot, capsicum, zucchini, and celery. Sauté until softened. * Add mince to the pot, breaking it up with a spoon. Season with salt and pepper. Cook until browned and cooked through. * Stir in tomatoes and passata. Simmer for about 15-20 minutes, allowing the flavours to meld together. Adjust seasoning to taste. * Preheat the oven to 180°C. * Spread a thin layer of the meat sauce on the bottom of a baking dish. Arrange a layer of lasagna sheets over the sauce. Spread a layer of the ricotta and spinach filling over the lasagna sheets. Add another layer of meat sauce over the ricotta filling and a sprinkle of mozarella cheese. Repeat the layers: lasagna sheets, ricotta and spinach filling, meat sauce, mozarella cheese. * Top with a final layer of lasagna sheets and spread any remaining meat sauce over the top. * Cover the baking dish with foil and bake in oven for 30 minutes.Remove the foil and sprinkle grated mozzarella and parmeson generously over the lasagna and continue baking for an additional 15-20 minutes, or until the cheese is melted and bubbly, and the lasagna is cooked through.
