@aleksbliszczyk: when i’m not buying discounted produce at the market i’m plucking it from the earth as god intended. it’s spring in melbourne which means wild garlic/angled onion/three-cornered leek is everywhere. native to europe and north africa, it’s classified as a noxious weed here so forage as much as you like. it smells very oniony and tastes like a sweet and extra savoury spring onion. i’m using it as the leek filling for afghani ashak - an incredible dumpling dish with two sauces - which i’ve made a couple of times with different recipes but this is my favourite vegetarian/foraged version. afghanistan has such incredible food and history❤️ for the ashak you will need: a giant bunch of three-cornered garlic a smaller bunch of dill 250g flour (preferably bread flour) 125g water for the vegetarian tomato sauce you will need: 1 brown onion 4 tomatoes 1 eggplant, roasted or grilled then peeled and chopped 2 red peppers, roasted or grilled then peeled and chopped 1/2 cup masoor daal big blob of tomato paste 1/2 tsp turmeric 1/2 tsp cumin seeds (toasted then ground) for the garlic yoghurt you will need: 1 cup yoghurt 1 clove garlic, minced olive oil dried mint (salt obviously goes in every component incl the dough) follow for more recipes that use cheap or found ingredients🌱 #Recipe #cooking #food #cheapeats #veganrecipes #LearnOnTikTok

In Afghanistan we use chives. You can get the same result using these leeks but you have to chop them smaller

Love this stuff. I pickle the roots, use the stem in fried rice, and flowers in Greek salad :-)

Be careful as they’re often sprayed with glypho for land management. When removing, remove all bulbs to prevent them coming back!

Cut the bottom bottoms off pop them in water or soil it’ll grow back for you. No need to forage.

Not the glass table!! 😱 I had horrific visions of you pushing too hard with the rolling pin and going straight through that thing 😫 dumplings look amazing tho, worth the risk 😆
