CHOCOLATE MOUSSE CAKE A dream ✨ Recipe below OR go to my website through the link in my bio 🤎 #Recipe Details (serves 12-16): Chocolate Cake: - 1 3/4 cups (240g) all-purpose flour @Bob’s Red Mill  - 1 3/4 cups (350g) granulated sugar - 3/4 cup (90g) unsweetened cocoa powder @Hershey’s  - 2 tsp (11g) baking soda - 1 tsp (4g) baking powder - 1 tsp (6g) salt - 1 cup (240ml) buttermilk - 1/2 cup (120ml) avocado oil (or oil of choice) - 2 eggs, at room temperature - 2 tsp (9g) vanilla extract - 1 cup (240ml) hot brewed coffee @Nespresso @Nespresso USA  Chocolate Mousse: - 2 eggs, at room temperature - 1/4 cup (50g) granulated sugar - 2 cups (480ml) heavy cream - 6oz semi-sweet chocolate chips @Nestlé @Nestlé USA @Nestle Toll House  Chocolate Ganache: - 8oz semi-sweet or dark chocolate chips @Ghirardelli Chocolate Company  - 1 cup (240ml) heavy cream - Flaky sea salt, for topping Instructions: Preheat the oven to 350F. Grease two 9” cake pans with butter, then dust with flour. Line the bottom with parchment paper rounds. Set aside. Make the cake layers. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Set aside. In a separate large bowl, whisk together the buttermilk, avocado oil, eggs, and vanilla until combined.  Add the dry ingredients to the wet, and whisk until combined. Then, pour in the hot coffee, and stir quickly until well combined. The batter is going to be very thin! Divide the batter evenly among the two prepared cake pans. Bake at 350F for 30-35 minutes, until a toothpick comes out clean. Remove the cakes from the oven and set on a wire rack. Allow to cool completely in the pan. As the cakes cool, prepare the chocolate mousse. In a small bowl, beat the eggs with the sugar for ~2-3 minutes, until pale yellow and foamy.  Slowly beat in 1/2 of the heavy cream (1 cup), until combined. Pour the mixture into a medium saucepan, and place over medium heat. Stir constantly while the mixture starts to thicken, ~3-4 minutes (DO NOT let it boil; when the mixture starts to coat the back of a spoon, it’s done). Remove from heat. Immediately add the chocolate chips and cover with a lid. Let sit for 1 minute. Then, mix until the chocolate is fully melted. Pour the chocolate mixture into a bowl and chill in the fridge for 1 hour. 1 hour before you want to assemble the cake, beat the remaining heavy cream (1 cup) in a large bowl or stand mixer until soft peaks form.  Remove the chocolate mixture from the fridge and add a few spoonfuls at a time as you continue beating the cream. Once everything is added the mixture should be well combined and fluffy. Place in the fridge until ready to assemble. Prepare the chocolate ganache. Place the chocolate chips into a large bowl. Heat the heavy cream in the microwave until hot. Pour the hot heavy cream over the chocolate chips. Let the mixture sit for 5 minutes, then stir until smooth. Assemble. I like to assemble this in a 9” springform pan with a piece of wax paper around the edges, however you can assemble it on a cake stand. First, level the cakes if needed by slicing a thin layer off the tops to create a flat surface. Place 1 cake layer down. Spoon ~1/3 cup of the ganache (save the rest for topping) over the first layer and spread evenly. Then, add all of the chocolate mousse on top and smooth it out using a spatula. Top with the second cake layer. Refrigerate the cake for 1 hour and up to 4 hours.  Once ready to serve, slightly heat up the rest of the chocolate ganache. Pour the ganache over the chilled cake and smooth. Garnish with flaky sea salt. Slice and serve.
