Mix well and knead for 10-12 minutes. Cover the dough and let it rise in a warm place for 1 hour, or until the dough has doubled in size. Transfer the dough to your work surface and divide it into 7 pieces (120 gr each). Take the dough and roll it out into an oval sheet measuring 24x12 cm. Fold the dough. Dip one side of the dough in fine semolina and then place it on a baking sheet lined with parchment paper. Repeat this process for the remaining pieces of dough.
