Add salt and pepper and mix until well combined. Cook the bacon: In a non-stick pan, cook the bacon in its own fat until crispy. Set aside. Cook the smash burgers: Shape the meat mixture into 8 patties, about 3.5 oz (100 g) each. Place each patty in the hot pan, press it down with a spatula using parchment paper underneath to prevent sticking. Cook until browned and a crust forms, then flip.
