If you are a caregiver or have an elderly parent living with you, you might be met with the challenge of making soft, low sodium food for a senior and then regular food for the rest of the family.  When my partner and I moved her elderly mom in with us this was very overwhelming. And I pretty much lived in the kitchen!  But over the past year, I have figured it out a lot of ways to quickly and easily prepare Meals for somebody on a soft food, low sodium diet and then the rest of the family.  We eat a lot of around here!  Super simple to make, super healthy, cheap, and it’s easy to make a soft, low sodium version of it and a normal version of it.  One of my biggest tricks is taking a basic broth and adding a lot of flavor to it, this allows me to build a variety of different meals throughout the week.  Today to enhance the broth I added leftover chicken bones, thyme, fennel, garlic powder, onion powder, and Italian seasoning.  I also added the juices from a chicken that I roasted for the week.  You bring that to a boil and then down to a simmer for at least 20 minutes. This is pretty much all it takes to build a ton of flavor and a basic broth.  to solve the problem of needing soft vegetables for our elderly parent and not soft vegetables for the rest of the family. I separate the dishes.  I air fry the veggies for the rest of the family. This is a simple fast way to cook vegetables with a lot of texture.  And for our elderly parent, soft, steamed carrots that I prepared earlier in the week. And I also added some boiled peas for more variety.  And that’s it. That’s a fast, simple chicken and farro soup for a senior and the rest of the family. ##softfooddiet##elderlycare##seniorcare##caregiver
