I make them without all the sugar. Just a tiny bit of water in the pot with the apples so they cook a bit without burning. I did a bit of cinnamon and nothing else. So good.

The pectin is in the raw apples too. Yes, cooking them does release it out of the fruit, but you don’t have to cook it to get the gut benefits of pectin
