They’re certified humane and full of flavor!  Spinach Pancake Tree Ingredients: a handful of fresh baby spinach 1 Nellie's Free Range Egg 4 oz unsweetened applesauce 1 1/3 cups buttermilk 1 tbsp sugar 1/2 tsp cinnamon 1/4 tsp salt 1 tsp vanilla extract 2 tbsp Nellie's Free Range Grass-Fed Unsalted Butter (+ extra for cooking) 1 1/2 cups all-purpose flour 1 tbsp baking powder (for decoration) raspberries, sprinkles, maple syrup Instructions 1. In a blender, add spinach, Nellie’s egg, applesauce, buttermilk, sugar, cinnamon, salt, vanilla extract, and 2 tbsp melted butter. Blend until smooth. 2. In a large mixing bowl, whisk together the flour and baking powder. 3. Pour the wet mixture into the dry ingredients. Gently fold the batter until just combined—do not overmix to keep the pancakes light and fluffy. Let the batter rest for 5–10 minutes. 4. Heat a nonstick pan or griddle over medium heat and melt a small amount of butter. Scoop the batter into the pan to make pancakes of varying sizes (from large to small).
