Part 153. Ka’ak Al Quds. A Palestinian bread that is filled with nutty goodness and crunch.                   Ingredients 400 grams bread flour  1/2 cup warm water 1/2 cup warm milk  6 grams yeast  1/4 cup olive oil plus 1 tbsp to drizzle  1 tsp salt 1 tbsp sugar  Topping 1.5 cups milk 1 tsp sugar  2 cups toasted sesame seeds  Direction  1. Bloom your yeast with warm milk, water, sugar and yeast. Let it sit for 5-10 minutes.  If you live in a colder climate it may take longer.  2. Mix the flour, 1/4 cup olive oil and salt into the yeast bowl. You’ll get a shaggy, wet dough.  3. Next you’ll want to knead this by hand for 12-15 minutes. If you have a KA use it for 10 minutes with a bread hook.  4. Coat the dough with olive oil and cover to rise for 1.5 hrs. Use the microwave or oven.  5. Punch the dough down to release the air and shape the dough into a circle. Divide into 4 pieces.  6. Form the triangles into a circular ball and poke a hole in the middle. Keep rotating until the center is big enough for you to pull the dough to stretch. Then tap your dough on the surface to help pull it to size.  7. Mix the milk and sugar. Set the toasted sesame seeds in a separate bowl.  8. Dip your dough into the milk. Make sure to coat it well. Then coat with sesame seeds on all sides.  9. You’ll need two baking pans here. Like it with parchment. Leave the dough to rise for 30 minutes.  10. Preheat the oven to 400F. You’ll bake this for 15 minutes.
