So presumably this is because all the nutrients in the top soil have been used, and they have to get some better soil to the top otherwise nothing will grow.

It was explained to me a few years ago that after flooding you can get poor clay soil washed over topsoil so the deep ploughing brings up the topsoil again... but this is on a slope so not the issue
