welcome back to my one pan meals series! 🥘💕 today we’re making white bean, kale, & sausage soup! this one is a personal favorite (and I know it’s a favorite of many others too) and the perfect cozy meal 😊 if you want to see the other meals in the series, just scroll back! * 2 tbsp olive oil * 1/2 lb ground Italian sausage (sweet or spicy) — sub another can of beans for plant-based * 1/2 large yellow onion, diced * 1-2 large carrots, diced * 2 large celery sticks, diced * 1-2 tsp kosher salt * 1/2 tsp black pepper * 1 tbsp garlic powder * 1 tbsp dried oregano * 1/2 tsp red pepper flakes * 15oz can navy or cannellini beans, drained & rinsed * 3 1/2 cups low-sodium vegetable broth * 1 cup water * 4-5 packed cups chopped kale (about half a head of kale, no stems) * * 13.5oz can full-fat coconut milk heat the oil over medium heat in a large pot, add the ground sausage and cook until browned. use a meat smasher or spoon to break it up into small pieces. once fully cooked, remove from the pot and set aside. in the same pot, add the onion, carrots, and celery. cook for about 10 mins, stirring occasionally, until the onions are translucent. season the vegetables with 1-2 tsp salt and the pepper, garlic, oregano, and red pepper flakes, stir to coat, and cook for another 3 mins, stirring occasionally. add the beans, vegetable broth, and water. stir, bring to a boil, then simmer for 20 mins. add the chopped kale and coconut milk and simmer until warmed. add the cooked sausage, season to taste, and serve! refrigerate in an airtight container for 2-3 days or freeze for up to a month. enjoy!! ❤️ #onepotmeal #onepanmeal #onepanmeals #onepotmeals #easyhealthydinners #easydinners #glutenfreerecipes #dairyfreerecipes #healthydinners #30minutemeals #mealprep #mealprepideas #soupseason #soup #souprecipe
