@kauscooks: Roasted Garlic & Pumpkin Pasta Recipe: (serves 4) - 500g pumpkin - 1 large whole garlic bulb (or 2 small) - 3-4 tbsp olive oil - 1 tsp paprika - 1 tsp oregano - Salt & Pepper to taste - 1 red pepper - 2 red chillis (optional) - 1 red onion - 1 cup/250ml veg stock - 300g pasta (net) Crispy breadcrumb topping: - 1 tbsp olive oil - 3 tbsp breadcrumbs - ½ tsp dried oregano - ½ tsp dried rosemary - ½ tsp paprika Method: 1. Preheat oven to 180C 2. Place chopped and peeled pumpkin into roasting tray, add olive oil, paprika and oregano, mix to ensure pumpkin is well coated 3. Cut the top off a whole bulb of garlic, drizzle with olive oil (approx 2 tbsp) and place in roasting tray along with red pepper, red chillis and red onion 4. Roast for 45-50 mins until pumpkin is fork tender and slightly caramelised 5. Squeeze garlic cloves and add rest of tray contents into a blender, add veggie stock. (I used one stock cube with 250ml hot water) and blend until smooth. Taste level of salt and add/adjust if necessary 6. Add to boiled pasta or have as it is as a soup with bread. You can add more stock to thin it out as much as you like. 7. For the crispy breadcrumbs: heat oil in a non stick pan, add breadcrumbs, oregano, parsley and paprika. Toast until breadcrumbs change to a golden brown colour, keep mixing, takes approx 3-5 mins on a low heat. Keep aside to top pasta or soup with. #roastedgarlic #pumpkin #pasta
