So we make it at home now😁 -makes 2 Mexican pizzas- 1lb ground beef 1/2 packet taco seasoning 1/2 cup olive or avocado oil, for frying 4 flour or almond flour tortillas 1/2 can refried beans (I heat mine with a few pieces of jalapeño) 1/2 cup enchilada sauce 1 cup 4-cheese blend Toppings as desired: sour cream, tomatoes, green onions, jalapeños, hot sauce INSTRUCTIONS 1. Preheat oven to 400. 2. Brown ground beef in a skillet on medium high. Remove from skillet and set aside. 3. In another skillet, heat oil on medium-high. Fry each side of the tortilla for 2-3 minutes, until browned. Set on paper towel to absorb excess oil. 4. Top one tortilla with refried beans and add ground beef. Top with other tortilla. 5. Add enchilada sauce, then cheese. 6. Bake for 8-10 minutes until melted. 7.
