SIMPLE ONE BOWL OATMEAL SCONES (GF, DF)✨ the perfect subtly sweet treat to enjoy on its own or with a generous spread of a your favorite jam. These simple scones were a childhood favorite of mine and the original recipe, which I've adapted to be gluten, dairy-free, and refined sugar-free, can be credited to my mom's friend @eviepoole1 who is an exceptional cook and baker!  Ingredients:  1 1/4 cups gluten-free flour blend (I used @bobsredmill 1:1 gf flour) 1/2 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1/2 cup dairy-free butter  1/2 cup coconut sugar 1 cup quick oats (+ more for sprinkling on top!) 1/3 cup plain unsweetened plant-based yogurt (I used @foragerfoods) Instructions:  Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. In a large mixing bowl, combine the gluten-free flour blend, baking soda, baking powder, salt, dairy-free butter, and coconut sugar. Use a pastry cutter or your hands to mix until the mixture is crumbly and resembles coarse sand. Stir in the oats until evenly incorporated. Then, add the plant-based yogurt and gently mix until the dough starts to come together. Turn the dough out onto a lightly floured surface (I forgot to flour my surface as you can tell). Knead for about 30 seconds. Pat the dough into a round disk, about 1 1/2 inches thick. Use a sharp knife to cut the disk into 8 equal wedges. Transfer the scones to the prepared baking sheet. Sprinkle with quick oats. Bake for 18-20 minutes, or until the scones are golden brown on the edges (I found 20 minutes to be perfect in my oven). Let the scones cool slightly before serving. Enjoy them warm with your favorite dairy-free spread, jam, or a drizzle of honey! Storage Tip: Store leftover scones in an airtight container at room temperature for up to 2 days, or in the freezer for longer storage.
