INGREDIENTS Chicken Skewers 3 pounds boneless, skinless chicken thighs, cut into 1-inch pieces 1 tablespoon onion powder 2 teaspoons soy sauce 1 teaspoon kosher salt 1 teaspoon black pepper 1 teaspoon chicken bouillon Cooking spray Chopped scallions, for garnish Bourbon Sauce 3 tablespoons unsalted butter 4 garlic cloves, minced 1 tablespoon minced ginger 1 cup hoisin sauce ½ cup apple juice ½ cup soy sauce ½ cup bourbon ¼ cup brown sugar PREPARATION 1. Make the chicken skewers: In a large bowl, toss together the chicken, onion powder, soy sauce, salt, pepper, and bouillon. Let marinate in the refrigerator for at least 30 minutes or up to overnight for a deeper flavor. 2. Make the bourbon sauce: In a saucepan over medium heat, melt the butter. Add the minced garlic and ginger. Cook, stirring constantly, until fragrant, about 1 minute. Whisk in the hoisin, apple juice, soy sauce, bourbon, and brown sugar. Bring to a simmer over low heat. Cook, stirring often, for 5–7 minutes, until slightly thickened. Remove from heat, and set aside. 3. Preheat the air fryer to 375°F (190°C). 4. Thread the marinated chicken onto 8-inch wooden skewers (about 6 pieces per skewer). 5. Arrange the chicken skewers in a single layer in the air fryer basket. Coat with cooking spray, and cook for 8 minutes. 6. Set aside some of the bourbon sauce for serving. Brush the skewers generously with the remaining bourbon sauce.
