curry butternut squash soup is my new FAVORITE. A perfect flavor bomb of comfort 🤭 recipe below!!  Ingredients:  -1 butternut squash -1 head of garlic   -2 medium diced shallots  -1 medium diced carrot  -2 Roma tomatoes (quartered)  -fresh grated ginger (~1/4tsp)  -1/2tsp tomato paste  -1 1/2tbsp butter  -seasonings: 1tbsp curry powder, nutmeg, turmeric  cayenne  -2 1/4c chicken or veggie broth  -1/3c heavy cream  -olive oil, salt, pepper  -option for toppings: more pepper, heavy cream, toasted pumpkin seeds  Recipe:  -preheat oven to 375F. Cut butternut squash in half and scoop out seeds. Cover in olive oil, salt and pepper. Place facedown on a tray lined with parchment paper.  -cut the top of the garlic, cover in oil and salt. Wrap in foil and add to tray with the squash. Bake in oven for 40 min until soft and tender  -in a large Dutch oven on med heat add butter, onions, carrots, tomatoes. Cook for 5 min then add seasonings (you can always add more so taste and adjust at the end but it was perfect for me!), fresh ginger and tomato paste. Cook for another 2 min until it’s fragrant then add the broth. Add a little broth at first to help deglaze the bottom, then add the rest -scoop out the flesh from the squash and add to the pot. Squeeze garlic and let simmer for 5 min. Add a generous pinch of salt  -pour into a blender (or you can use an immersion blender). Blend on high until smooth (2ish min)  -add back soup back to the Dutch oven. Add heavy cream. Taste and adjust!!  -top w heavy cream, pumpkin seeds and pepper 🫶🏼  *the cheesy bread is just toasted bread w/ butter and white cheddar:)
